Saratoga Elementary's First Harvest Brings Learning to Life

When the hydroponically-grown fresh romaine hit the cafeteria line, word spread quickly. Students were excited to recognize the lettuce on their trays, and others who had already eaten went back through the line just to try it, calling their teacher over to proudly point it out and say things like, "Look! I have hydroponic lettuce," and "Hydroponic lettuce is the best!"

It was a clear sign of the excitement and pride behind something they helped grow. As part of Fairfax County Public Schools' exploration of how on-site food production can enhance student learning and nutrition, Saratoga Elementary has been learning and growing with the hydroponic Flex Farm in its STEM lab. Students carefully maintained, grew, and harvested nearly 20 pounds of fresh, crisp romaine lettuce — planting the seeds, monitoring the system, and bringing the harvest straight to the cafeteria themselves. The very next day, they had the chance to see and taste the results of their hard work on their own lunch trays - talk about harvest to plate!

For many students, the harvest provided a moment of connection to their food, to their learning, and to understanding that they have a role in shaping healthier communities. We know that when students grow their own food they are more likely to try it, and they develop habits that last far beyond the classroom.

From hands-on STEM learning to real-world applications of science and nutrition, Saratoga Elementary students can now experience firsthand how food is grown and why it matters. The STEM room has been buzzing with excitement — you can tell from these photos!
