Growing Nutrition Security: A Food is Medicine Approach to the Holidays

As the holidays approach, our thoughts naturally turn to food and favorite recipes, shared meals, and the traditions that bring people together. But this special season also presents a powerful reminder that not everyone has access to fresh, nourishing food, and what we eat directly impacts our health.

That’s where the Food Is Medicine (FIM) movement comes in. Across the country, healthcare systems, policymakers, and communities are recognizing that food is one of our most powerful tools for improving health and preventing disease. And, at the heart of this movement is a shift from food security to nutrition security, which ensures access to healthy, nutrient-rich foods that support well-being. It’s important to fuel health, not just fill the plate.

Nutrition security adds the crucial dimension of quality and health—focusing on the mix of nutrients and the ability to use food to promote well-being and prevent disease. For example, a household can be food secure but still be nutrition insecure if its diet is high in calories but low in essential nutrients. Nutrition security  promotes equitable access and making healthy food available to everyone, regardless of income, race, or geographic location

This is where indoor hydroponic growing can play a transformative role. By bringing food production directly into schools, hospitals, and community centers, we can eliminate barriers to access and grow nutrient-rich food right where people live, learn, and heal. And, food grown in hydroponic farms is among the most nutrient-dense food available since it goes from harvest to plate within minutes – there’s no transportation time, and no time for food to lose nutrients or fresh taste.

At Fork Farms, we’ve seen firsthand how fresh food can make a difference. Our Flex Farms allow communities to grow up to 25 pounds of fresh greens every month using no soil, no pesticides, and 98% less water than traditional farming. At Fork Farms, we believe that everyone should have access to fresh food at all times. This is an important goal for us during the holidays and each and every day.

In schools, students are learning that the same leafy greens they study in science class can become part of a balanced meal that fuels their minds and bodies. In healthcare and community settings, local produce grown on-site is being incorporated into meal programs that support recovery, reduce chronic disease risk, and improve overall wellness.

This hands-on connection to food transforms how people think about eating and health. When someone participates in growing, harvesting, and eating their own greens, food becomes medicine, not a meal.

This holiday season, as we celebrate abundance, let’s also celebrate access. Every salad harvested from a Flex Farm or Flex Acre is a reminder that nourishment can be equitable, sustainable, and joyful.

At Fork Farms, we believe that when people are empowered to grow their own fresh food, they’re improving their health and their future. When food becomes medicine, communities thrive, and Fork Farms is in the business of helping communities grow and thrive.
