As the holidays approach, there’s nothing better than gathering with friends and family to share good food, laughter, and a few festive drinks. And, while the season often leans heavily on indulgence, it’s easy and fun to create something just as celebratory that’s fresh and healthy.

Enter the Cucumber Mint Holiday Mocktail — a crisp, hydrating, and beautifully green drink made with hydroponically grown cucumbers and mint. This mocktail captures the brightness of summer produce while fitting perfectly into cozy winter gatherings.

Cucumber Mint Holiday Mocktail Recipe

Serves: 2–3
Prep time: 10 minutes

Ingredients

  • ½ large cucumber, peeled and sliced (fresh from your Flex Farm!)
  • 6–8 fresh mint leaves (fresh from your Flex Farm!)
  • 1 tablespoon honey or agave syrup (optional, to taste)
  • Juice of 1 lime
  • 1 cup sparkling water or club soda
  • Ice cubes
  • Optional garnish: cucumber ribbons, mint sprigs, or frozen cranberries for a festive touch

Instructions

  1. Muddle the flavor. In a shaker or large glass, gently muddle the cucumber slices and mint leaves together to release their juices and aroma.
  2. Add sweetness and lime. Stir in the honey (if using) and fresh lime juice.
  3. Shake or stir. Add ice and shake (or stir) to chill the mixture.
  4. Top with sparkle. Pour the mixture evenly into glasses and top with sparkling water.
  5. Garnish and serve. Add a cucumber ribbon, a few fresh mint leaves, or a pop of color with frozen cranberries.
